  14. Prepare as needed Oil for deep frying
  15. Take Ingredients for potato pumpkin sabji
  16. Take 3 potato cut into lengthwise with peel
  17. Make ready 1 cup pumpkin cut into lengthwise without peel
  18. Get 2-3 tomato finely chopped
  19. Get 2 green chilles finely chopped
  20. Take 2 tsp grated ginger
  21. Take 1 tsp red chilli powder
  22. Get 2 tsp coriander powder
  23. Get 1/2 tsp haldi/ turmeric
  24. Make ready to taste Salt
  25. Take 1/2 tsp garam masala
  26. Take 1 tbsp chopped coriander
  27. Take 8-10 Curry leaves
  28. Make ready 1 tsp (rai,jeera,sauf,dana meethi,ajwain mix)mustard,cumin,fennel,fenugreek seeds carom seeds
  29. Take 2 tsp oil
  30. Make ready as required Generous pinch of hingh

Urad Dal Puri, also known as Bedmi Kachori. This hearty dish is fried puffed bread with a mix of lentils and spices. Urad Dal Puri is a North Indian delicacy, which is both delicious and festive. This is made for all special occasions at my home accompanied with spicy Squash sabji, raita and Methi Chutney.

Instructions to make Potato pumpkin sabji and barley bedmi puri:
  1. For puries: In a large bowl add all above ingredients expect oil for deep frying add little water and make a slightly firm dough.
  2. Next make lemon size balls of the dough and roll out puries.
  3. Heat oil in a wok on high flame once oil is hot, reduce flame to medium-high and fry puries. - - Ready.
  4. For Sabji:Heat oil in a cooker Add rai,jeera,dana meethi,ajwain and let it crackle.
  5. Now add curry leaves, hingh mix stir a while.
  6. Now add tomato,ginger,green chilli,potato,pumpkin,spices and mix well.
  7. Next put 2-3 cup water and cover the lid and let it cook for 2 whistle.
  8. Once the steamed release open the cooker add chopped coriander serve with bedmi puries.

Urad Dal Puri is a North Indian delicacy, which is both delicious and festive. This is made for all special occasions at my home accompanied with spicy Squash sabji, raita and Methi Chutney.
